Rate of use

For small batches: 2.5ml (½ tsp.) / 12-15 L (3-4 gallons) for hard cheese or 1.7 ml (1/3 tsp.) /8 L (2 gallons) for soft cheese

For large batches: 8-10 ml/100 L for hard cheese or 4-5 ml/100 L for soft cheese
